Fresh Side is the same cut as bacon, however, it is fresh and neither cured nor smoked. You can prepare it fresh (fry or bake), or you can experiment with your own curing blends and/or smoking.
Our Pasture-Raised Pork is raised on our regenerative farm right on the Utah/Idaho border (just outside of Snowville, to be exact). We never feed them corn or soy. They are rotated to fresh pasture regularly and spend their days eating prairie grass and rooting up the soil - an important piece of the regenerative farm ecosystem.
